Like most things in life, not all recipes are the same. Seems kinda obvious, but what we are really trying to say is that some require a lot of intricate work and time while others are simple and easy, often being just as tasty.
This month we are sharing a super simple summer salad that is a huge hit with our guests, and it’s also as pretty as a picture! We love salads in the summer months. This one is really delicious and it heroes the glorious pink watermelon. You can add more of what you like or take out the ingredients that aren’t your favourite, change it up to make it the best watermelon salad for you. Enjoy!
RECIPE: (serves 2)
- 250g round or square shaped fresh watermelon
- 30g crumbled feta cheese
- Handful chopped mint
- 1 radish, sliced
- 8 cucumber ribbons
- Goats cheese, rolled into grape size balls
- 2 pieces toasted bruschetta to serve
- Olive oil
- Salt & pepper
METHOD:
Arrange all the ingredients between two plates, drizzle with olive oil, season to taste and serve with some toasted bruschetta.
