It seems that Gerard is getting extremely generous with his well-guarded, much loved, family recipes. And aren’t we all the better off for it?
This week he has very kindly shared his grandmother’s oat biscuit recipe. Truly these little cookies are out of this world, even though the recipe makes well over twenty-four we take you a bet they will not be around for long. Enjoy!
Ingredients:
- 225 g butter, soft
- 350 g brown sugar
- 2 eggs
- 285 g all-purpose flour
- 5 ml baking powder
- 5 ml bicarb of soda
- 30 ml milk
- 15 ml vanilla essence
- 2,5 ml ground cinnamon
- 200 g rolled oats
- 115 g pecan nuts, finely chopped
Method:
- Pre heat oven to 180°C.
- In a stand mixer, with the paddle attachment, cream the butter and sugar together.
- Add the eggs, one at a time, to the butter mix and beat well.
- In a separate bowl, sift together the flour, baking powder, bicarb and cinnamon.
- Mix the flour into the butter and egg mixture.
- Add the milk and vanilla essence and mix well.
- Add the oats and pecan nuts.Mix well.
- On a greased baking tray, place spoonfuls of biscuit dough, leaving enough space between the balls for the biscuits to spread.
- Flatten the tops slightly with a fork.
- Bake for 15 minutes or until the tops are golden brown.
- Once baked, remove from the oven and place on a cooling rack.
- Once the biscuits are cool, store in an airtight container.
