Hlokomela Fund Raising Party
In early September, our local herb garden held its 2nd annual Hlokomela fund raising bush party.
This was a highly anticipated event and everyone was thoroughly looking forward to it.
The event works as follows: Each of the lodges in the area that support the Hlokomela project must provide a variety of finger snacks that incorporates some of the fresh herbs that Hlokomela grow. We all then get together and showcase our creations.
This is a great time for us chefs to put on our thinking caps and get creative with the wonderful variety of fresh herbs that Hlokomela offer.
Hlokomela itself is a local community empowerment project who grow, package and sell a variety of fresh herbs and edible flowers to the surrounding lodges in the Hoedspruit, Sabie Sands and Timbavati area. For those of you who have visited us here at Tanda Tula Safari Camp, you will know that I do not have very green fingers when it comes to gardening! So by supporting the Hlokomela herb project, everyone wins.
Although the wind picked up during the event, everyone was in high spirits, with guests and staff have a fantastic time.
On Tanda Tula’s table I had prepared:
- My beetroot and blue cheese quiche with fresh rosemary
- My butternut and apple wontons with chopped fresh mint
- Chicken meatballs made with peppadew, feta cheese and fresh thyme
- Chocolate brownies flavoured with fresh ginger and lavender
- Mini rooibos and lemongrass cupcakes
