​Warming winter Glühwein

One of our favourite winter warmers when you return from game drive at Tanda Tula on a cold night is our home brewed glüwein. After a few tasty sips of this warm spicy-sweet- citrusy punch our guests forget all about the cold night’s safari. You can make this recipe in bulk so it is perfect for your next big winter party. Glüwein really is a brilliant boozy punch to be sipped by the fireside and warm any guests hands and hearts.

Why not try it for yourself:


2 medium lemons

2 medium oranges

10 whole cloves

5 cardamom pods

1 1/4 cups granulated sugar

1 1/4 cups water

2 long cinnamon sticks

2 750-ml bottles dry red wine, we like Cabernet Sauvignon

1/2 cup brandy


1.Using a vegetable peeler, remove the zest from the lemons and oranges in wide strips, avoiding the white pith, place the zest in a large saucepan. Then add the juice from the lemons and oranges to the pot.

2.Place the cloves and cardamom in a small piece of cloth, tie it tightly with string, and add the bundle to the saucepan.

3.Add the sugar, water, and cinnamon sticks to the pot and bring to a simmer, stirring until the sugar dissolves. Reduce the heat to low and continue to simmer, stirring occasionally, until the mixture is reduced by about one-third, about 20 minutes.

4.Add the red wine and brandy, stir to combine, and bring just to a simmer (don’t let it boil).

5.Remove from the heat and remove and discard the spice bundle before serving.
