Delicious Carrot Cake Recipe

Carrot cake muffins

Makes 24

  • 2 cups Cake flour
  • 2 teaspoons Bicarb of soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Nutmeg
  • 3 large Eggs
  • 2 cups White sugar
  • 3/4 cup Sunflower oil
  • 1 teaspoons Vanilla Essence
  • 2 cup Carrots, Grated
  • 1 cup Walnuts, Chopped
  • Cream cheese icing:
  • 250g Butter
  • 2 cup Icing sugar
  • 1 teaspoon Vanilla Essence
  • Method:

    1.Preheat oven to 180°C.

    2.Combine the flour, sugar, Bicarb, salt, nutmeg and cinnamon in a bowl.

    3.Mix the egg, oil, vanilla essence, carrot, and walnuts together in a separate bowl.

    4.Pour over the dry ingredients and fold until well combined.

    5.Divide equally in 2 greased muffin tins.

    6.Bake for 20 – 25 minutes.

    7.Once baked, remove from the oven and allow to cool before turning out.

    8.For the icing:

    a.Beat the butter and the vanilla essence together with the electric beater.

    b.Slowly add the icing sugar until the icing is thick and creamy

    c.Keep in the fridge until needed.

    9.Arrange the carrot cake muffins on a serving platter and top with the icing.
