Minted Halloumi Spring Roll

Everyone loves a recipe that is easy and delicious! Sometimes the simple things are just as pleasing as the long, involved ones! Here is one of Tanda Tula's super easy starters that is guaranteed to impress any dinner party!

Ingredients:

1 Packet filo pastry

1 piece of halloumi, grated

Handful fresh mint, roughly chopped

1 tbs sweet chilli sauce

1 egg, beaten

Oil for frying

Method:

  1. Slice the filo pastry into triangle shaped pieces, cover with a damp cloth to stop it drying out.
  2. Mix the grate halloumi with the mint, chilli sauce and egg.
  3. Place some of the filling along the bottom of every triangular piece of pastry. Fold in the sides then brush some water on the top of the triangle and roll up.
  4. Fry the spring rolls in batches until golden Allow to drain on paper towel.
  5. Serve with a bowl of sweet chill sauce or as a plated starter with a yogurt and cucumber salad.
