Mango Mania: An authentic African culinary experience at Tanda Tula

The smell of rain, sightings of baby impalas and the call of the Woodlands Kingfisher are all animated signs of summer. In addition to these summer joys, and perhaps the most exciting, is the abundance of mangoes! We pride ourselves on providing an authentic African culinary experience for all our guests – and mangoes give us another opportunity to showcase this delight!

All the mangoes we receive are locally produced on the farms surrounding Hoedspruit, the closest town to the Timbavati. Our talented team of chefs, led by Ryan and Chris, use the bounty of mangoes we receive to experiment with various delicious recipes. Some of these delectable menu items include salads, salsas, desserts and smoothies.

Our mango and chilli salsa is one of these menu items that take advantage of the mango season. The zingy, scrumptious dish works incredibly well with fish, chicken, and even a Thai-inspired vegetarian curry.

Because the recipe is too good not to share, we have dedicated today’s blog to sharing the recipe for the hot mango salsa.

Hot Mango Salsa

Ingredients:

  • a medium mango (not too ripe), cut into small cubes
  • 1 red chilli, seeds removed and thinly sliced
  • 1 tbs chopped mint
  • juice of 1 lime
  • 1 tsp fish sauce
  • 1 tbs sesame oil

Method:

  1. Combine all the ingredients in a bowl
  2. Allow to sit for about an hour (this helps the flavours infuse)
  3. Serve and enjoy!
