Iced Tea for High Tea

As the temperatures begin to soar it seems almost impossible to enjoy any hot beverages at high tea before the warm afternoon safari. So much for that old colonial belief that a cup of hot tea cools you down like nothing else! Our bar team serve a delicious iced tea which is immensely popular. Guests are always asking for the recipe during their stay so we decided to share it again. Enjoy!

Summer Honey Iced Tea

Makes 1 large jug

Ingredients

4 honey flavoured rooibos tea bags

8 tots passionfruit cordial

1 litre sparkling water

fresh cut strawberries

slices of lime

Method

1.Place the teabags in 500 ml of boiling water and leave to soak for 10 minutes

2.Add the cordial to the tea mixture and place in the fridge for 2 hours or until cold.

3.Add the sparkling water to the jug of tea mixture and top with lots of ice, strawberries and lime wedges. Serve
