Cucumber and Lime Slushy

 

How do we survive the scorching summer days at Tanda Tula? Well, with a couple of these! It is the most delicious refreshing drink possibly ever to be found on safari. Obviously, there is the alcohol free version which is just as delicious, but we find the guests just adore these long ice cold, uber healthy cocktails.

 

INGREDIENTS

1/2 cup fresh lime juice (about 4 to 6 limes)

1/4 cup caster sugar

1/3 cup fresh mint leaves

1 cm knob of peeled ginger

1/2 cup sliced cucumber

2 limes, zested

1/2 cup light rum

ice

sprigs of mint

Lime slices

 

DIRECTIONS

1 Place the lime juice, agave, mint leaves, lime zest, and rum to a blender. Blend until smooth. Fill the blender to top with ice and blend until slushy.

2 Pour into glasses and garnish each glass with a lime slice
