½ Cup Basmati Rice

3 Cups Hot Water

250g Pork Mince

1 Medium Onion

1 Green Pepper

1 Teaspoon Grated Ginger

1 Teaspoon Grated Garlic

1 Tablespoon Soya Sauce

1 Tablespoon Fresh Coriander, Finely Chopped

1 Spring Onion, Finely Chopped

1. Rinse and drain the basmati rice.

2. Place the rice and the water in a pot and boil for 10 – 12 minutes (or until the rice is cooked but still hasa slight crunch).

3. Once cooked, strain the rice and leave one side to cool.

4. In a frying pan, sauté the onions and green pepper with some sunflower oil.

5. Once the onions have turned translucent, add the garlic and the ginger and continue frying.

6. Add the pork mince and fry until the mince has turned light brown in colour.

7. Add the soya sauce and the rice and fry just until the rice has heated through.

8. Remove from the heat and add the chopped coriander and spring onion.

9. Stir in the coriander and spring onion and season to taste.

10. Serve hot.
